Recipe
Take one whole shad (3 to 5 pounds), scaled and cleaned.
Prepare a cup of freshly chopped onions.
Place the fish in pan large enough for the length of the fish.
Open the fish and place chopped onions (and chopped potatoes if desired) inside. Close the fish.
Make 3 or 4 cuts vertically across the top (side) of the fish. Sprinkle chopped onions into openings.
Spread strips of bacon across the top of fish, and sprinkle with salt and pepper, or lemon pepper.
Bake at 350 degrees until tender and cooked through.
Some people like to cover the chopped onions inside and on top the fish with tomato sauce.
