Baked Shad

Recipe

check Take one whole shad (3 to 5 pounds), scaled and cleaned.

check Prepare a cup of freshly chopped onions.

check Place the fish in pan large enough for the length of the fish.

check Open the fish and place chopped onions (and chopped potatoes if desired) inside. Close the fish.

check Make 3 or 4 cuts vertically across the top (side) of the fish. Sprinkle chopped onions into openings.

check Spread strips of bacon across the top of fish, and sprinkle with salt and pepper, or lemon pepper.

check Bake at 350 degrees until tender and cooked through.

check Some people like to cover the chopped onions inside and on top the fish with tomato sauce.
